As a "daily", before declaring the size you want, I'd think of the "visual".


Some oyster cost as much or more then DateJust and they are basically same watch with many similar dial color options,   w/o date with some cosmetic and functional differences. Some DJ with oyster bracelet will look even closer to OP.

Do you need a date? - if so , Date Just is you go to.
Do you like brushed finish (I do), or prefer polished metals? - for brushed the OP is great.

If you go OP, there are 36, 39, 41 sizes. 
The newer ones  have great bracelet with easylink.

One more point. the 39 OP have lum dot next to the hour markers, a no go for me aesthetically.  
..

But for me? dressy DJ vs "casual" OP? - OP over Date Just any time, mainly lye because of the brushed finishing.

Any thoughts on the 39mm vs 36mm I’m thinking Grey dial no numerals. Vintage vs Modern? I’m looking for something to wear casually but that’s a bit off the beaten path. I’ve had bubble backs but TBH they are a tad small for my taste.

So many choices there...

...I am no Rolexpert® but I think any simple Rolex, especially in steel, is a great addition to any collection. And if one isn't a collector, it's one of those watches that will last you the rest of your life and always be in style. Tough to beat the crow...

I have an OP 39 black for 6 years

and still enjoy wearing it as day 1. This is the least cliché Rolex as you can find : no polished centre link, no cyclops etc. I admit I also have a spare rhodium dial to mount some time in the future have a look at the white dial, also a solid option!

I'd go Vintage.
